Pasta e Fagioli ali Pasta fizol minestra

Pasta e Fagioli or Pasta fazool is a traditional Italian dish which I usually cook it in the winter time. The basic ingredients of this soup are beans and some small type of pasta. This time I used macaroni from Mac’n’Cheese box I had left without cheese. But usually I go with elbow macaroni. Pasta fazool originally doesn’t contain any meat and other vegetables. If it does than it’s called Minestrone soup. I guess that evolved later when people could afford to eat more. Pasta e Fagioli was a poor people food in the old times, but later they started cooking it with some sausage or mostly with some smoked pork ribs or neck or smoked pigs feet. I used smoked pigs feet this time which are great for flavoring stews and soups. Beans are also good substitute for meat and when it comes to proteins beans are comparable to meat. They content two ingredients that make you feel fuller, faster – fiber and water. And note to those who are on diet: adding beans to your diet helps cut calories without feeling deprived.

You will need:

1 can kidney beans or use fresh beans, but soak them in the water over night

1 cup pasta (elbow macaroni or ditalini)

3-4 tbsp oil

1-2 tbsp flour (optional)

1 small onion, chopped

1 tsp sweet paprika or fresh cut red bell pepper

1 tbsp tomato paste or 1 fresh tomato pilled and cut

1/2 tsp marjoram

1 bay leaf

1 clove garlic

1 tsp vinegar or 1 tbsp red vine

salt , pepper

smoked meat or sausage

Garnish: minced parsley

If you’re using fresh beans, you have to drain the soaked beans and then put them in a large pot with water to cover by 3 inches. Bring them to boil and then reduce heat and simmer until tender for about 30-40 min. Do not drain!

In another pot heat oil, add chopped onion and fry until yellow, then add flour and cook for a minute, before flour turns yellow add 1 tsp vinegar. (If you choose to skip flour, you’ll have to mash some beans if you want the soup to be thicker and add vinegar later.) Now stir in tomato paste or strained fresh tomato and paprika or red pepper and cook for a minute and then add water. – How much it depends on the ingredients if they are fresh or canned.

If you used fresh beans which you cooked then whisk in 1/2 or 1 cup cold water into sauce util the sauce is smooth. Now add this sauce to cooked beans, add smoked meat, bring to boil and add pasta and other spices and cook until pasta is done for about 10 minutes more.

But if you’re using canned beans you have to add more cold water, a few cups. It depends how much soup you want. Then add smoked meat, bring to boil and add pasta and spices. 5 minutes before pasta is cooked add canned beans and vinegar.

The soup should be thick. When serve garnish with minced parsley.

Pasta fizol je tradicionalna italijanska jed, ki jo ponavadi kuhamo v zimskem casu, da nas ogreje. Osnovne sestavine te juhe so fizol in manjse testenine, ponavadi so to makaroni oz Pipette Rigate. Jed Pasta fizol prvotno ni vsebovala mesa. Verjetno zato, ker je v starih casih to bila hrana bolj revnih ljudi. Kasneje pa so seveda zaceli tej juhi dodajati meso, ponavadi kaksno klobaso v glavnem pa prekajena svinjska rebra ali dimljene prasicje noge ter se ostalo zelenjavo. Taka juha se zdaj imenuje Minestrone juha.

Jaz sem dodala prekajene prasicje noge, ki dajo juham in enolocnicam nek poseben gust. Prav tako je fizol zelo dober nadomestek za meso in ko gre za kalorije se fizol lahko primerja z mesom. Ker vsebuje vlaknine in vodo vas bo hitreje nasitil. In se zanimivost za tiste, ki ste na dieti: dodajanje fizola k vasi prehrani pomaga zmanjsati vnos kalorij brez obcutka, da ste zanje prikrajsani.

No pa gremo kuhat!
Potrebujemo:

1 srednjo plocevinko fizola, lahko uporabis svez fizol, vendar ga cez noc namoci v vodi
1 skodelica testenin (makaroni)
3-4 zlice olja
1-2 zlici moke (neobvezno)
1 majhna cebula, nasekljana
1 zlicka sladke paprike ali pol sveze narezane rdece paprike
1 zlica paradiznikove mezge ali 1 svez olupljen paradiznik, lahko spasiran
malo majarona
1 lovorjev list
1 strok cesna
1 cajna zlicka kisa ali 1 zlica rdecega vina
sol, poper
prekajeno meso ali klobase

Ce nameravas kuhati s svezim fizolom, ga po tem, ko je bil cez noc namocen odcedi na cedilu in ga daj v velik lonec ter prelij z vodo, ki naj bo za nekje 7 cm visja od fizola. To daj kuhati in ko zavre zmanjsaj ogenj in kuhaj dokler okoli 30-40min dokler se fizol ne zmehca. Ko je kuhano, fizola ne odcejaj!

V drugem loncu med tem naredimo temno prezganje in sicer tako, da segreejs olje, dodas sesekljano cebulo in jo prazis do rumene barve, nato dodas moko in prazis se kaksno minuto. Preden moka porumeni dodas se 1 cajno zlicko kisa. (Ce zelis lahko moko in s tem prezganje izpustis, ampak preprazis samo cebulo. Vendar moras kasneje zato spasirati malo fizola, da bo juha gostejsa, tudi kis dadas kasneje.) Sedaj v to prazenje vmesaj paradiznikovo mezgo ali svez paradiznik in papriko ter kuhaj se kaksno minute. Zdaj dodaj vodo. – Koliko vode dodas je odvisno od fizola, glede na to, ali je svez ali konzerviran.

Ce uporabljas svez, kuhan fizol, potem v omako vlij 1/ 2 ali 1 skodelico hladne vode da dobis gladko zmes. To omako dodaj h kuhanemu fizolu, dodaj prekajeno meso in kuhaj do vrenja ter dodaj testenine in druge zacimbe. Kuhaj toliko casa, da se makaroni skuhajo, približno 10-12 minut.

Ce pa nameravas uporabiti konzerviran fizol pa moras dodati vec hladne vode, tam nekje do polovice lonca, malo vec oziroma odvisno, koliko juhe zelis skuhati in koliko makaronov imas saj so se tip o kuhanju povecajo. Nato dodaj prekajeno meso, kuhaj da zavre in dodaj makarone in zacimbe. 5 minut, preden so makaroni skuhani dodaj fizol in kis ali vino. Juha mora biti gosta. Postrezi in okrasi jo s sesekljanim petersiljem.
