This is one of the best pizzas if you love sea food as much as I do. It’s a pizza topped with sea food which we call ‘’Fruits of the sea’’ or ‘’Sea fruits’’ so don’t get confused further on reading this recipe. I love my pizza topped with calamari, squid, octopus, crab meat, shrimps and shells. And unfortunately I can’t find any pizzeria here in USA that would offer pizza like this, actually I noticed that most of Americans have never heard of it. Have you? Where and what do you think about it?
Well this pizza is really popular pizza in my country especially on our sea side and also in Croatia and Italy and maybe somewhere else in Europe too. So here is the recipe. The pizza dough is made with yogurt and I think yogurt is a special ingredient here because this is the best homemade pizza dough if you want to get closer to those made at the pizzerias.
For the pizza dough you will need:4 cups flour 2 packs dry yeast 1 tsp sugar 1 tsp salt 1 tbsp olive oil ½ cup yogurt ½ cup water or milk
Put 2 tablespoons of flour in a small bowl, add yeast to it, sugar and 4 tablespoons of warm water and gently stir. Set aside, cover with a clean cloth and let it rise in a warm room.
Prepare bigger bowl and measure 4 cups flour and sift it in a bowl. In the middle make a smaller hole by pushing the flour to the sides of the bowl, now sprinkle salt on the outside of the flour, not in the hole, so the salt doesn’t mix with the yeast right away when we add it because it stops its process. Now add the risen yeast, warm milk or water, oil and yogurt in the middle of the bowl in the hole. Stir and knead all together in nice flexible dough.
Prepare your pizza pan, sprinkle it with a little flour or corn meal and stretch the dough over it, you can help yourself with a rolling pin but leave the edges a little thicker.
For the topping you will need:2-3 Fresh tomatoes, pilled and cut for the base Frozen sea food, if you can get fresh even better Crab meat Garlic Parsley Basil & Oregano Olive oil Mozzarella cheese Olives
Cook tomatoes in a skillet until you get a thicker consistency and the juice evaporates, so they won’t be too watery, because it will make the dough cook not bake. It should almost look like tomato paste with chunks of tomatoes in it, if you use canned tomatoes drain them and cook the same way. Add basil, oregano, a pinch of salt and some black pepper by taste.
Thaw frozen sea fruits drain the water out and wrap them in a paper towel so they are completely dry. Chop some garlic and parsley, depends how much you like garlic. Now stir together sea fruits, garlic, parsley and a little olive oil. It’s the best to do this 30 minutes before you start making pizza so sea fruits marinate.
When you have it all prepared top the pizza dough first with tomatoes, then with sea fruits and add some crab meat sticks and sprinkle with shredded mozzarella cheese and one olive in the middle. Put in preheated oven to the highest temperature, between 400F and 500F and bake in the middle rack for the first 7 minutes and then on the upper rack for the next 5-7 minutes, until the cheese is melted and the bottom of the crust is golden.
When pizza is done you can top it with so called ‘’Trieste sauce’’ which we eat a lot with fish and all kinds of sea food.
Trieste sauce:2 -4 cloves garlic
Stir it together and it’s ready to top your pizza. But if you would like to top the fish with it, cook the fish and when it’s cook remove it from the pan and pour Trieste sauce in it and heat it up. It will catch the fish flavor while heating up. When it starts to boil remove and spill over your fish.
