Strawberry Valentine’s Cupcakes – Valentinove jagodne cupcakes

Not so long ago my friend was telling me about some delicious Strawberry cupcakes iced with cream cheese frosting she made and of course gave me some to taste. And I can only say that these cupcakes are Strawberry heaven! So I asked her about the recipe and promised myself that I will make them as soon as I have some more time.

So the other day I went grocery shopping and they had strawberries and blueberries on sale for a $1. Of course I bought whole bunch of them. It was a perfect timing because I wanted to bake something so bad. So I decided to make these delicious, moist, juicy strawberry cupcakes. Originally the recipe calls for a cream cheese frosting which I made too but I also made Swiss Meringue Buttercream frosting, just because I like to do new things in the kitchen. I made cream cheese frosting before, but never Swiss Meringue. And I like it a lot, because it contains so much less sugar than any other frosting. And with those cupcakes it worked perfectly because they are sweet enough by them self. But the best combination is the real cream cheese frosting. And even my husband was eating them even though he doesn’t eat anything made with cream cheese. Yes, they are that good ! 😉

I’m not going to write the recipe here but will only invite you to my friend’s blog page. She published it already and just stick to the recipe and you can’t go wrong. The only thing you can do different is that you can use less sugar in the frosting – I only used 1.5 cup not 3 cups and butter instead margarine.

Because I had so many blueberries I also made a few blueberry cupcakes, using blueberries and blueberry jello. They too were delicious. But nothing can beat the flavor of the strawberry ones.

Recipe for Swiss meringue buttercream frosting:

1/2 cup granulated sugar (do not use any other kind of sugar)

2 large egg whites

3/4 cup butter softened

1/2 tsp vanilla extract

Make a double boiler. Place a big metal bowl over a pot of lightly simmering water. Don’t let the bowl touch the water. (see picture above) Immediately add the sugar followed by the egg whites. Whisk together over the simmering water until you can’t feel the sugar grains when you rub the mixture between your fingers.

Now whip the mixture with an electric mixer until it turns white and doubles in volume. Then blend in the vanilla.

Now start adding the butter in about 3 additions or so and continue to whip until the mixture gets thick and you think that it is thick enough to decorate with. This will take some time. You have to keep whipping it until it gets from a really weird consistency to a crumbled cheesy like one and then you will get a nice smooth consistency. So just keep whipping it, I needed 9 minutes. It’s worth the time you have to mix it and it’s such a nice frosting to work with.

This buttercream does not get a crust on the surface and it stays fluffy even after sitting overnight (does not flatten). Because the egg whites are cooked the frosting is safe.

Uff ze naslov da vedeti, da tele cupcakes pa le niso kar tako. In res je. Ne dolgo nazaj mi je kolegica razlagala o teh slastnih, socnih jagodnih mini torticah, ki jih je naredila. Kar ni jih mogla prehvaliti. No, ko sem jih sama poskusila, sem razumela zakaj. Zdaj jih tudi jaz ne morem prehvaliti. In najboljse pri celotnem receptu je, da se uporabi cisto prave jagode, kar posledicno poskrbi za jagodno sladkobo in socnost. Mmhmm res so dobre.

Sama sem jih naredila tudi nekaj iz borovnic, tako za pokusino, ker sem ravno imela dve veliki posodi jagod in borovnic. Na sreco tu prodajajo vse vrste sadja skozi celo leto, tokrat je bilo se na znizanju. Jagode in borovnice po 1$. Seveda sem nagrabila robe za 20$. Nekaj sem jih uporabila za cupcakes, ostalo pa v zamrzovalnik za smooth-ije. In ravno pravi cas, ker se priblizuje Valentinovo.

Recept za biskvit:

5 jajc

250g sladkorja ( ali 200g, ce so jagode zelo sladke )

250g moke

1 pecilni prasek

1dl mleka

½ dl olja

1 skodelica zmeckanih jagod

85g želatine v prahu jagodnega okusa

 

Jagode pretlaci s tlacilko za pire krompir, se lazje je, ce jih das v plasticno vrecko, ki se zapre in cez njih zarolas valjar ali tezko posodo. Vazno da so na koncu pretlacene.

Tokrat sem za biskvit uporabila ze kupljen mix, ker mi je primanjkovalo casa, drugace pa vedno delam po enakem standardnem receptu za biskvit, ki se ga more za pripravo tehle cupcakes malo prirediti:

Loci beljake od rumenjakov. Beljake stepi v sneg. V drugi skledi z mikserjem zmesaj rumenjake in sladkor, dodaj mleko in olje, nato vmesaj se moko zmesano s pecilnim praskom in zelatino v prahu. Dobro zmiksaj in dodaj se jagode.

Se enkrat vse dobro zmiksaj, da se jagode se malo razgradijo. Na koncu rahlo vmesaj sneg beljakov. Ne stepaj vec, le dobro premesaj z metljico za mesanje, da dobis gladko zmes.

Za borovniceve cupcakes sem uporabila borovnice namesto jagod in borovnicevo zelatino namesto jagodne.

Zdaj prelij biskvitno maso v cupcake posodice/papircke. Napolni jih nekje do ½ oziroma ¾ posodice.Daj peci v ne ogreto pecico na 175C za nekje 20 minut. Po 20 minutah preveri, ce so peceni tako, da vanje zapicis zobotrebec in ce je cist, ko ga potegnes ven, je peceno.

Pusti da se popolnoma ohladijo, sele potem jih dekoriraj.

Med tem casom pa se loti kreme za okrasitev, oziroma kot temu pravijo tu, frostinga.

Ker uporabim vsako priloznost za preizkusanje novih in drugacnih receptov, sem naredila 2 kremi. Osnovna krema, ki najbolje pase na te cupcakes-e je Cream cheese frosting ali po slovensko, Krema iz kremnega sircka. Druga-vijolicna, obarvana z jedilno barvo pa je Swiss Meringue Buttercream frosting oziroma Svicarsko masleno kremo. Ta krema mi je se posebej vsec ker ne vsebuje ogromne kolicine sladkorja, pa se dobra je.

Krema iz kremnega sircka – Cream Cheese Frosting:

230g kremnega sircka

55g masla

160g sladkorja v prahu ali ena cajna salica

1 cajna zlicka vanilijevega ekstrakta

2 zlici tekoce sladke smetane ali mleka, ce je krema pregosta

Prvo z mikserjem mesaj/stepaj samo maslo, dokler ne spremeni barve na cisto belo, potem dodaj kremni sircek in nadaljuj z miksanjem. Ko je dobro zmesano lahko zacnes postopoma dodajati sladkor in se naprej miksas.

Ko je vse dobro zmesano in dobis lepo kremasto zmes, je priprava frostinga koncana. To je nekje po kaksni minuti dveh miksanja od dodajanja sladkorja. Ce je krema pregosta v primeru da uporabis malo vec sladkorja, lahko dodas malo mleka ali tekoce sladke smetane.

Opomba: v osnovnem receptu je 330g sladkorja v prahu ampak meni je to prevec in se frosting je prevec tekoc, ker ga sladkor, ki se stopi zmehca. A po zelji lahko uporabis vec sladkorja vendar kremo okusaj med postopkom priprave, da ne bo prevec sladko.

Ko je krema narejena jo postavi v hladilnik za 10 minut, da se malo strdi in bo pripravljena za okrasevanje.

Švicarska maslena krema – Swiss Meringue Buttercream frosting:

115g ali 1/2 cajne skodelice navadnega kristalnega sladkorja (ne v prahu)

Beljak 2 jajc

170g mehkega masla ( ne stopljenega)

½ cajne zlicke vanilijeve essence

Potrebujes 2 lonca, ki ju postavis enega na drugega. (kot na zgornji sliki)V spodnji lonec nalij malo vode nekje do 3cm, toliko da se ne dotika dna zgornje posode. Vodo zavri in naj rahlo vre na najnizji temperature. Na to posodo postavi drugo posodo ali kovinsko skledo v katero streses sladkor in takoj vanjo vlijes tudi beljake.

Mesaj z metljico za stepanje in s prsti vsake toliko casa otipaj zmes.

Ko vec ne cutis kristalov sladkorja, je zmes pripravljena za nadaljno uporabo. To je nekje po minuti, dveh.

Zdaj to maso mesaj z elektricnim mikserjem, da se volume podvoji in masa postane bela. Dodaj vanilijevo essence in miksaj. Zacni dodajati maslo, ki je narezano na kocke.

Maslo dodaj v treh korakih, postopoma in vmes miksaj. Zdaj moras miksati toliko casa, da se iz cudne zmesi zacne tvoriti sirasta zmes.

Nadaljuj z miksanje dokler ne dobis gladko lepo kremo. Nekje 9 minut sem se jaz nastopala. To je kjlucen podatek, ker ce ne miksas dovolj dolgo, ne dobis prave kreme. Ce tudi po 9-ih minutah ni lepe kreme, nadaljuj z miksanjem, dokler ne dobis zeljenega rezultata. Veliko ljudi tu obupa in misli, da ni uspelo, ampak se mora samo miksat dokler ne uspe. Ko je krema dovolj trdna in gladka za okrasevanje, lahko prenehas.

Opomba: Ker so beljaki pokuhani na vodni pari, ni bojazni za kakrsnekoli okuzbe. Cupcakes okrasene s to kremo so lahko shranjene na sobni temperaturi.

blueberry romantic Valentine's cupcakes Za okrasevanje pa potrebujes dekoracijsko vrecko za brizganje kreme in tulec razlicnih oblik za razlicne okrasevalne tehnike. Ampak tudi brez tulca je cisto v redu. Namesto brizgalne vrecke lahko uporabis tudi peki papir, ki ga zrezes v obliki kroga in zvijes v tulec. Napolnis s kremo in odrezec konico ter nabrizgas na cupcakes.

      This Meringue is actually a frosting, buttercream meringue. I love how you don’t need to put all the sugar in like in a regular buttercream. But I made some Meringue cupcakes long time ago, you can see them here: https://www.facebook.com/media/set/?set=a.334229263283458.77702.302324363140615&type=3 These are awesome. I used to love those when I was a kid, they were on cookies and called Indijanci – if you’re in Croatia now you could maybe find them somewhere. But I just made them on cupcakes:) it’s even better.
